Begin sedately, in the quietly historic town of Dunedin with its fine universities surrounded by the genteel architecture of Victorian and Edwardian streets giving way to a sheltered harbour.

Then travel to the nearby Otago Peninsula, where there are several settlements of an older type. Here you’ll come face to face with the famous yellow-eyed penguins, and visit the country’s only mainland breeding colony of royal albatross. You may also glimpse the rare New Zealand sea lion. There’s fly fishing and a virtually untouched southern rainforest in Southland, but the real highlights of your luxury, tailor-made holiday to New Zealand are yet to come.

There are wildlife encounters aplenty and a petrified forest of subtropical kauri and Jurassic-period trees scattered along the Catlins Coast. And then there’s Stewart Island; uninhabited except for a wide selection of indigenous birds, enjoying unspoiled wetlands, native bush, dunes and cliffs. Expect to see kiwis, tokoeka, tui, kaka, bellbirds, warblers and parakeets. Yet more birds reveal themselves on Ulva Island, where the primeval rainforest is home to rare and threatened species.
