The former home of one of Fez’s most prominent families, Palais Amani is an incredibly serene and beautiful base from which to lift the lid on Morocco’s cultural capital.

Housed within a 17th century palace, this lovingly restored hotel impresses with its carved plaster arches, beautiful Moroccan tiling, Iraqi stained glass windows and citrus-scented central courtyard. Set around the fragrant gardens, the 18 rooms and suites are decorated in a modern Moroccan style and come complete with every amenity. There’s a rooftop terrace with 360 degree views, a luxury hammam and gastronomic restaurant. The food here is fresh, local and delicious, and served either by the fountain in the courtyard or in the refined dining room.

As well as courses in calligraphy and wine tasting, the hotel runs its own cooking school where you can learn how to recreate traditional Moroccan dishes back at home. The Palais Amani is mere moments from one of the main entrances to the Fes el Bali – arguably the best-preserved medina in the Arab world.
